Vor mehr als tausend Jahren entdeckten die Japaner "Aspergillus oryzae", einen winzig kleinen Organismus, der zu den edelsten aller Schimmelpilze zählt. Dieser Schimmelpilz verwandelt alles, was er fermentiert, in ein köstliches Elixier. In Japan wird er seit Jahrhunderten für die traditionelle Herstellung von Sojasoße und Reiswein gezüchtet.
